PALEO ZUCCHINI BOLOGNESE WITH HOMEMADE PASTA SAUCEšŸ…šŸ„’šŸ™ŒšŸ¼

One of my favourite childhood recipes is spaghetti Bolognese, so I decided to recreate it but extra healthy and delicious šŸ˜‹

GLUTEN FREE āœ…

DAIRY FREEāœ…

REFINED SUGAR FREEāœ…

GUT FRIENDLYāœ…

NUTRIENT DENSEāœ…




HOMEMADE PASTA SAUCE:

  • 1 can of organic crushed tomatoes

  • 100g celery

  • 1 carrot grated

  • 1 garlic clove

  • 50mL water


SAUCE METHOD:

  1. place all ingredients in a blender, blend on low for 30seconds

  2. once smooth, place sauce in a saucepan and heat on stove for 2 minutes while continuously stirring

  3. place sauce on top of zucchini noodles


ZUCCHINI NOODLE:

  1. Spiralize 1 whole zucchin, and boil 1/2 packet of chickpea pasta on the stove

  2. add the zucchini to the pasta sauce and let it simmer for 5 minutes

  3. add spinach, carrot, asparagus to mixture

  4. simmer on low for 5mins and add pasta

  5. dish up and enjoy
